 Designed for culinary connoisseurs, the unique spirit of Japan comes vividly to life at KIGO, located within Four Seasons Hotel Dubai International Financial Centre. Created by Fundamental Hospitality alongside celebrated Chef Izu Ani and Head Chef Akinori ‘Aki’ Tanigawa, KIGO embodies the essence of kaiseki, Japan’s most refined culinary art form. Every dish, sound, and gesture within this intimate space reflects centuries of tradition, honouring the beauty of seasonality and mindfulness in dining.

Within KIGO’s minimalist 44-seat dining room, diners are instantly transported to the captivating surroundings of this renowned Asian nation. The setting, crafted in the serene spirit of Wa (harmony), features a striking sushi counter made from rare Aji stone, sourced from Kagawa Prefecture in Japan. Each piece of chinaware and glassware has been hand-selected from Japan, complementing the purity of each course. The result is a calm, meditative environment where every element, including the ikebana floral arrangement and the gentle rhythm of service, reflects Japan’s quiet elegance. Kaiseki, which lies at the centre of dining experience, is the pinnacle of Japanese dining, a cultural ritual that began as a simple meal shared among monks before evolving into a culinary art form defined by precision, storytelling, and seasonality. Each course speaks to nature’s rhythm, evokes emotion, inspires contemplation, and celebrates the fleeting beauty of time. Rooted in mindfulness, the word kaiseki itself originates from onjaku, the warm stone monks once carried to soothe hunger, a symbolic reminder of simplicity and gratitude that still guides the cuisine today. At KIGO, every element of the kaiseki journey is meticulously observed. Dishes arrive in auspicious odd numbers, like three, five, or seven, symbolising completeness and harmony. The presentation embraces the Japanese concept of Ma (space), where balance and simplicity are as important as the food itself. Plates are never crowded, but instead, the beauty of emptiness allows each ingredient to breathe, much like a Japanese garden. Even the sounds of dining, the delicate click of an osuimono lid or the faint sizzle of grilled fish, are integral to the sensory experience, awakening the five senses in perfect harmony. Authenticity also shines through in the rhythm of the meal. At KIGO, rice, soup, and pickles are not served first, but last, which is an intentional gesture that symbolises closure and reflection. These final dishes cleanse the palate and prepare the guest for tea, bringing the experience full circle in a serene conclusion. Pickles and herbs, too, carry meaning, with their subtle fragrance marking the graceful end of the journey, leaving behind a sense of calm and appreciation. Conversation plays its own quiet role at KIGO. Here, the exchange between guest and chef, the respectful pauses, and the gentle flow of dialogue are part of the hospitality itself. It is a meditation in motion, a story told through touch, sound, and timing.

Rounding out the journey, guests can enjoy Yame Matcha from the renowned Hoshino Tea Plantation, one of Japan’s most esteemed producers of premium green tea. Sourced from the lush valleys of Okuyame in Fukuoka Prefecture, Hoshino’s tea cultivation is guided by centuries-old traditions and meticulous craftsmanship. Hoshino represents the pinnacle of tea artistry, with this single-estate, single-variety matcha revered for its deep umami, velvety texture, and vibrant aroma. Served as the final act of the kaiseki experience, it offers a moment of quiet reflection and purity. Further deepening the authenticity of the experience is KIGO’s exclusive sake collection, headlined by the Shigemasu 18 Junmai Daiginjo, sourced from a revered brewery in Fukuoka, the birthplace of Head Chef Akinori Tanigawa. This rare sake, unavailable anywhere else in the region, is a perfect expression of KIGO’s dedication to cultural precision and craftsmanship. Each pour embodies the purity and patience of Japanese artistry, complementing the subtle flavours of the kaiseki sequence. To source all of the premium ingredients found on the menu, which cannot be found anywhere else in Dubai, Chef Aki himself went to meet the producers, sample their produce, and carry their visions back to Dubai. On November 6th, KIGO will unveil its Winter Kaiseki Menu, continuing its journey through Japan’s 24 solar terms, a culinary calendar that extends beyond the four seasons to capture the subtle transitions of nature. As a special highlight, once it becomes available in December, guests will be introduced to the Mitsunoka Kiwami strawberry, a rare Japanese fruit from a single farmer, offered exclusively at KIGO. This exquisite ingredient will play a starring role in the new menu, reflecting the restaurant’s devotion to sourcing exceptional produce and presenting it at the height of its natural beauty. KIGO pays homage to the artistry and soul of Japan by offering a dining experience that transcends luxury, rooted in grace, precision, and purpose.
