In the spotlight, this year is Yugen in Osaka, which has just ascended from one to two MICHELIN stars, thanks to its sublime menu that includes stewed delicacies and a dashi that sings with umami from kombu kelp. The guide now lists 27 two-star establishments and celebrates the sustained excellence of eight three-star titans like Kikunoi Honten and Hyotei, which have held their three stars for 15 consecutive years.
