At the heart of AKA Sushi is a commitment to Japanese culinary traditions, led by Executive Chef Hisatsugu Muneta, who hails from Osaka with 21 years of experience across Japan, Hong Kong and Dubai. Drawing on his expertise of traditional techniques and a contemporary approach to Japanese cuisine, Chef Muneta has crafted a menu that balances authenticity with creativity, showcasing premium ingredients, familiar favourites and inventive flavour combinations that reflect the precision and artistry of Japanese cooking. 

Taking centre stage is a carefully curated selection of sushi, ranging from timeless classics to indulgent signature creations. Among the highlights is the Yakiniku Roll, an elevated combination of premium 9+ striploin, caviar, gold leaf and sweet chilli soy. The Ebi Maki Roll delivers a satisfying contrast of textures with crispy shrimp tempura, tobiko, bonito flakes and spicy mayonnaise, while the Unagi Maki showcases the richness of freshwater eel complemented by traditional unagi sauce. Familiar favourites, including the California Roll, complete the selection designed to appeal to both sushi enthusiasts and those discovering Japanese cuisine. 

The experience extends beyond sushi, with a collection of dishes that place premium ingredients and bold Japanese flavours in the spotlight. Diners can discover tender Wagyu Short Ribs, accompanied by wasabi shallot relish and a rich short rib sauce, or indulge in the Wagyu Sando, featuring Japanese mustard, fresh truffle in soft brioche bread. Another standout is the Black Cod, delicately marinated in miso and served with pickled daikon, offering a refined balance of sweet and savoury flavours. 

As the evening progresses, AKA Sushi reveals another side to its personality. The distinctive interiors set the scene for intimate dinners and celebratory gatherings, while live DJ entertainment introduces a livelier rhythm as the night unfolds. The grand opening of AKA Sushi Restaurant will be attended by the Consul General of Japan in Dubai and it also marks the first anniversary since the hotel’s opening, adding to Mileo The Palm's growing dining portfolio, which includes Papagalos, AY Restaurant, Matcha 16 Café, Fan Zone Sports Bar and AYA Rooftop. With each venue offering its own distinct identity, AKA Sushi adds a dedicated Japanese restaurant and lounge to the hotel's culinary collection, further broadening its appeal to Dubai residents and international visitors.
