Anantara The Palm Dubai Resort will welcome one of Asia’s most celebrated culinary voices, Chef Bongkoch “Bee” Satongun, for an exclusive appearance this November in partnership with Dilmah Tea. The Bangkok-born chef, famed for elevating Thai cooking, will lead two signature experiences over one remarkable weekend, with each dish thoughtfully paired with a fine Dilmah tea to enhance the flavours and aromas.

Chef Bee is best known as the force behind Paste Bangkok, a restaurant that retained its Michelin star from 2018 - 2023. Her work is a harmonious blend of history and innovation, informed by deep research into royal family cookbooks and ancient Thai recipes. Named Asia’s Best Female Chef by the World’s 50 Best Restaurants in 2018, she has since earned accolades across continents, from Sydney’s Southern Highlands to international culinary stages in Paris and Hong Kong. Together with her husband and partner, Jason Bailey, she continues to challenge perceptions of Thai food, presenting it not as casual fare, but as a cuisine of complexity and identity. On Friday 21 November, Chef Bee will present a family-style sharing menu at Mekong, the resort’s signature Asian restaurant. Drawing on forgotten techniques and flavour profiles, she will present dishes such as hor mok souffle with crab and kang kua scallop curry. Each course will be expertly paired with a Dilmah Ceylon tea – the world’s first producer-owned tea brand –, thus offering guests a multi-sensory journey that celebrates both Thai culinary heritage and the artistry of tea. The following day, on Saturday 22 November, diners at the resort’s popular Fork & Cork Brunch will be treated to a live station hosted by Chef Bee herself. For one afternoon only, guests will be able to see the award-winning chef at work and sample her fragrant creations, and enjoy bespoke Dilmah tea pairings designed to complement every bite. Tucked away in a quiet corner of the resort, Mekong is known for its refined take on the culinary pillars of the countries along its great waterway. With rich wood accents, flickering lanterns and intimate spaces, it evokes stories from the region while serving as a backdrop for some of the most memorable flavours in Dubai. “This is a rare and exciting moment,” says Dominic Petzold, Executive Chef at Anantara The Palm Dubai Resort. “Chef Bee is a master of her craft. Her work represents a culinary tradition that is centuries old, yet she renders it with such clarity and modern grace. Paired with the exceptional teas from globally renowned family tea business Dilmah, this will be a one-of-a-kind experience for Dubai’s dining community.” Join Chef Bee at Mekong on Friday 21 November from 6:00 pm to 11:30 pm, where the experience is priced at AED 375 per person, and at Crescendo on Saturday 22 November from 1:00 pm to 4:00 pm, with prices starting from AED 450 per person, for an unforgettable gourmet celebration of Thai cuisine and fine tea pairing.
