On December 7th, the modern trattoria will host a rare twelve-hands dinner, celebrating Italian heritage through exceptional ingredients, culinary traditions, and Italy’s rich gastronomic culture. This winter-themed menu comes as Italy’s cuisine is nominated for inclusion on the UNESCO List of Intangible Cultural Heritage of Humanity, highlighting a food tradition cherished across generations.
Located in the Riyadh Marriott Hotel, Cucina embodies the Italian philosophy of La Dolce Vita. Its modern trattoria interiors, featuring vibrant graffiti and neon signage, capture the energy of Italy’s seaside towns and cobblestone streets. Every corner hums with conversation, from the open kitchen and coffee bar to the inviting gelateria and elegant private dining rooms.
Every dish tells a story. Helmed by Executive Chef Daniele Valente, the menu features handmade pasta, fresh pizzas, and artisanal gelato. Chef Valente’s experience across Tuscany’s top venues ensures a culinary approach that is both authentic and innovative.
Joining him for this exclusive evening is Chef Enrico Derflingher, former chef of the British Royal Household and White House under President George H. W. Bush, honoured as Commendatore della Repubblica Italiana and Ambassador of Italian Cuisine. Michelin-starred Chef Vincenzo Guarino adds his signature Mediterranean style, blending Neapolitan roots with international influences. Euro-Toques Chef Germano Pisano and Master Chocolatier Massimo Tavoletta will bring their distinct flair, while Chef Daniele Chiari, Culinary Director of the Royal Protocol of Saudi Arabia, bridges Italian tradition with local taste.
Priced at SAR 575 per person, the journey begins with Chef Pisano’s Red Prawn from Mazara del Vallo, served with carrot and pea velouté and buffalo mozzarella granita, followed by Chef Chiari’s Apennine Mixed Mushroom Soup with Parmigiano Reggiano DOP foam and rustic bread. Highlights include Chef Derflingher’s King Charles Risotto with Carnaroli rice, Gran Vittoria Bassi Gorgonzola DOP, and black truffle, Chef Guarino’s Seared Yellowfin Tuna with puttanesca reduction, and Chef Valente’s Braised Beef Cheek with creamy potato purée and spiced red grape sauce.
The savoury journey concludes with Italian cheeses, followed by Chef Tavoletta’s curated desserts: crispy cannoli, airy cream puffs, decadent millefoglie, chocolate cookies, and almond biscuits. Diners can also enjoy Cucina’s specialty cocktails, tea, coffee, and water.
